Basic

General
bind - binds commands to key
map [mapname] - Opens a map
quit - Exits
recordNetDemo [name]- start recording a demo
stopNetDemo - stop recording demo, demos are saved in your "quake 4\q4base\demos directory"
_impulse0 - Switch weapons to gauntlet
_impulse1 - MachineGun
_impulse2 - ShotGun
_impulse3 - Hyperblaster
_impulse4 - GranadeLauncher
_impulse5 - Nailgun

Graphics
r_gamma - Change the bringtness of the screen, default "1"
g_fov - Changes the players field of view, default "90"
g_crosshairsize - Change size of your crosshair
g_crosshaircolor "0 1 1 1" - Color of crosshair, 0 1 1 1 = Alpha Red Green Blue, values go from 0.0 to 1.0.
screenshot - Records a screenshot and places it in the screenshot directory
com_drawfps - Draw FPS counter
sizedown - decreases the size of the screen
sizeup - increases the size of the screen
gfxinfo - Displays info on your graphics card

Network

cl_punkbuster "1" - Enable punkbuster anti-cheat software, if punkbuster is disabled, you will not be able to join servers that have it enabled.
say - Text chat
say_team - Chat with your teammates only
name - You players name
note: you can change the color of the text when chatting and give yourself a colorful name, by hitting the "^" key and then a number from 1 to 8, for example:

will set your name to "-=FG Fred=-"

^1 = Red
^2 = Green
^3 = Yellow
^4 = Blue
^5 = Light Blue
^6 = Magneta
^7 = White
^8 = Black

m_strafeSmooth
m_smooth - Number of mouse inputs blended, higher number = smoother, but slower reaction
m_strafeScale
m_yaw - horizontal sensitivity.
m_pitch - vertical sensitivity
sensitivity - overall mouse sensitivity

Unconfirmed Commands

com_fixedtic - Set to "-1" to unlocks the 60hz fixed framerate, hopefully we can do this in Quake 4 too.

benchmark - benchmarks your system with different screen sizes

recorddemo - record a demo

stoprecording - stop the recording of a demo
